Until 2016 Chia seeds was less-widely known. It is only recently that the world was acquainted with this superfood. It is now popping at every grocery store, on every restaurant’s menu and is becoming a favorite in every health-conscious household.
Originally from Mexico, this tiny grain has myriad health benefits. From raising your HDL ( good cholesterol), to lowering your blood pressure, to improving your overall gut health, this powerhouse of nutrients is becoming a dietary must-have. It is rich in Omega-3 fatty acids ( result softer youthful skin), dietary fiber, calcium, iron, and antioxidants. The more you delve into the benefits of Chia, the more you’ll become a fan of this tiny wonder.
Chia doesn’t have a taste of it’s own but its the crunch that makes it a favorite in parfaits, in drinks, and smoothies, on avocado toasts or just about in anything. I love mine in smoothies and on avocado toasts over eggs. I recently tried a store-bought Chia drink and loved it so much that I was compelled to make a healthier, low-sugar version of it. It is sweet, a little bit tangy and the hydrated Chia makes it pretty filling.
Ingredients ( makes 2 servings ):
- 1 ( 16 oz) tetra pack cold coconut water
- 2 tbsp chia seeds soaked in water for half n hour
- 1 sweet mango ( you can use frozen mangoes, make sure to thaw them before juicing )
- 2 tbsp lime juice ( use less if you don’t enjoy your drink too tangy )
Method:
- In a blender, blend the coconut water and mango till the mango is thoroughly pureed.
- Then add the lime juice and hydrated chia seeds- pulse a few times. You don’t want to break the chia seeds. Hence it is added at the end.
- Pour it in a glass and enjoy. It is best enjoyed cold.
- When mangoes are out of season, you could replace it with strawberries or other berries or even kiwi for that matter. I’m sure it will taste equally refreshing.
