I had been craving to make a plum cake all summer long, but something or the other kept coming in the way of making this fresh fruity cake. For the most part of my summer, I was in India, where supposedly I am on vacation from my kitchen duties and then when I came back, I had other things both at work and home, and I just couldn’t find the time to bake one. Thanks to my trip to the supermarket last week, I caved in at the sight of fresh plump plums and bought some home……thereafter rest is history.
I perused far and wide for an easy low sugar GF recipe and found this one in one of the cookbooks I got from the local library. This one here today is made using regular flour, but you could totally substitute that with gluten-free flour. The recipe is really simple, with the simplest of recipes and the tastiest of cakes. What made the process faster was my new OSTER HAND MIXER WITH HEATSOFT TECHNOLOGY. What it does is with a push of a button, it starts to heat the hard butter stick, eventually melting it in seconds. So it cuts down the softening-butter time. I call this an award-winning cake coz it tastes amazingly fresh, doesn’t need too much effort and your family is sure to go gaga over it’s yumminess……a win-win in everyone’s books!
FOR THE CAKE :
- 2 1/3 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 cup sugar
- 4 ounces butter
- 3/4 cup milk
- 2 large eggs (at room temperature)
- 2 plums thinly sliced
RECIPE :
- Preheat the oven to 350 F. Lightly coat a round 9-inch baking dish with cooking spray.
- Take the butter stick in a large bowl, push the heat button. The heatsoft technology will start melting the butter in secs. Push the button off once the butter is softened completely. Mix the flour, baking powder, salt, and sugar. Add the milk and eggs. Beat with the mixer at medium speed for 4 minutes or until all of the ingredients have combined.
- Pour the batter into the prepared pan. Position the sliced plums on top, pushing them slightly down into the batter.
- Bake for 40 minutes, top with roughly chopped pistachios and serve cold or warm.
I like mine warm with a dollop of whipped cream……total food heaven!
