If you guys remember of my story from yesterday, nothing has changed today and I am still recovering from the sadness of not being able to make it to the Lucky Fabb in April.
Gosh, I feel so terrible and miserable too !!! Boohoo
Whatsoever like any other normal human all I needed was some good food to provide me any bit of comfort. For me mashed potatoes, cheesy macaroni, chicken pot pie and what not don’t count as comfort food, what I needed was some flavorful Indian delicacy. All I could dream of was some hot flavored rice . So I got my tushy off the wailing couch ( no alternative ) and prepared my all time favorite and quick three in one rice. It’s a tricolor layered rice that can be eaten as an entree with some raita ( yoghurt dip ) or with veggie kolhapuri that I ended up making .
I promise the recipe I have in store for you will ease out any pensiveness in a flash, it sure did for me.
So without any further ado lets get started :
This under given quantity is good enough for 6 hungry people.
Cooked Basmati rice – 3 cups, one cup each for the 3 colors
For the white rice :
100 gm grated paneer ( cottage cheese ) or 2 boiled eggs
2tbsp finely chopped onion
2 green chillies chopped
1/2 tsp cumin seeds
2tbsp oil
Salt and pepper to taste
In a wok heat the oil, then add cumin seeds, chillies and onions. When the onions turn golden brown add the paneer/ eggs. Then add the rice and season with salt and pepper. Keep aside.
For the orange rice :
100gm grated carrot
100gm boiled, puréed tomato
2tbsp chopped onion
2green chillies chopped
2tbsp oil
1tsp sugar
Salt and pepper to taste
In the same wok heat the oil, then add the chillies and onions. Then add the carrots and sauté for a min or so. The add the tomato purée, salt, pepper and sugar. Sauté this for another minute or so and then add rice and stir to coat. Keep aside.
For the green rice :
1 bunch coriander/cilantro or 1cup boiled peas
1cup spinach
1/2″ ginger
3 medium cloves of garlic
1/2tsp cumin seeds
2tbsp oil
Salt and pepper
In a food processor puree the spinach, coriander, ginger and garlic.
Heat oil in a wok, when hot add cumin seeds. Let them crackle. Now add the green puree and cook for a min or so. Then add the rice and season with salt and pepper.
For the garnish:
Some fried onion ( I skipped this )
Coriander chopped
5-6 fried cashews
In a square/rectangular glass dish arrange the layers of rice, any order. I did orange on top then white and then green, just as these colors appear on the Indian flag. That is it, there is no waiting after this, so dig in !
