chicken cilantro with diced veggies
First time on my blog, I have a fellow blogger Payal from http://payalghosh.blogspot.in/ do a post for me. She is a kitchen maestro, who is hands on with yummylicious recipes for any occasion. Her inventive style of cooking range from low to medium level of toughness. I have known her from my elementary school days as a bubbly girl who always seemed to have zeal for new things in life.
Payal was gracious enough to share her latest cooking invention with me and my beautiful readers. Can’t thank her enough for this, I really owe her one.
The recipe is a low calorie, but delicious, drool worthy chicken preparation. Can’t wait to try this.
So the recipe is as follows.
Chicken- 400gms ( diced into cubes)
Red and yellow bell pepper: 1 cup
Onion cubes: 1 cup
Garlic: 4 cloves cut into small pieces
Ginger paste: 1 spoon
Cilantro: good 2 bunch, cleaned and chopped
Button mushrooms : 5-6 ( halved)
Vinegar and soy sauce : to taste
Add ginger paste to the chicken with a modest quantity of cilantro and a cup of water and pressure cook. After two whistles, drain the mixture.
Steam the yellow and red bell pepper and mushrooms in a microwave for 5 mins.
In a wok add 1 spoon of oil, add the garlic cloves and then add the onions cubes, stir fry them and add all the steamed veggies.
Now add the boiled chicken+cilantro mix to the above, add soy, vinegar and salt.
Finish with green chillies as garnish.
