Rice Omelette
Leftover rice!!!!
Tell me about it. You are bound to have it in your fridge if your husband is a roti ( Indian bread ) eater, and if you ever make some for yourself, you end up with quantity enough for 4.
So to make use of the leftovers I found this rice omelette recipe in the book called ” AROUND THE WORLD IN 450 RECIPES”. This is an amazing cook book that I have had for years and FYI, I have tried at least 40% of the around the world recipes.

So today I thought I would share one of my favorite’s from this book.
RICE OMELETTE
Serves 4
For the rice filling:-
2 tsp butter
1 small onion chopped
1/4 cup carrot , chopped
3-4 mushrooms, stems removed and chopped
1 tbsp chopped cilantro
2 cups leftover rice
2tbsp ketchup
For the omelette:-
6eggs
1/4 cup milk
Salt and pepper to taste
Melt 2 tsp butter in a pan, fry the onions for 1 minute. Then add the carrots and mushrooms, stir- fry until soft over medium heat. Then add the rice, ketchup, salt and pepper and finish with the chopped cilantro.
Next beat the eggs lightly, add the milk, salt and pepper.
Melt 1tsp butter in another pan over medium heat. Pour in a quarter of the egg mixture and stir it briefly with a fork, then let it set for 1 minute. Cook the omelette to your liking of doneness. Put some rice mixture and fold the omelette over the rice . Slide it onto a plate and TA DA, it’s ready.. Looks lengthy but it’s real quick and easy.
