Fill a saucepan with enough water to cover the eggs by 1-2 inches. Put some salt and drop the eggs in it, let it boil for a good 15-16 minutes.
In the meantime take 3 individual cups filled with water ( one cup for each color, I used three colors ). Pour in 1 tbsp of vinegar in each cup and 8-10 drops of food color in the cups.
Once the eggs are done and rested for a few more minutes, peel them carefully without breaking the egg whites. Now cut the eggs lengthwise in half. Gently remove the egg yolks in bowl. Now drop four pieces carefully in each color and let it rest for an additional 15 minutes. If after 15 minutes you feel the egg whites need to be brighter, leave them in the color for some extra time.
In a bowl take the egg yolks, add all the ingredients and mix together with a fork till smooth. If you have a piping bag, feel free use it for filling, otherwise a ziplock bag snipped at the corner works fine too.
Fill the egg yolk mixture into your colored egg white shells. Garnish with your favorite topping and serve at room temperature.
